Do you have OneDrive turned on, and is it "backing up" your Documents folder?
That's known to cause problems like this.
RealFlight stores its settings in your "My Documents" folder. That's usually C:\Users\youruser\Documents. RealFlight creates its own folder in there.
If OneDrive is managing My Documents, then it interferes with what RealFlight is trying to do.
