Cockpit view

All of them can. You just have to be on a 3D field, and you may or may not have to install a camera. It is a simple thing to do in the Aircraft Editor. You can put cameras anywhere you want.
 
I've got a writeup here about how to add cameras. But yes, step one is to use a 3D field and not a PhotoField.

If I recall correctly, all planes will have a nose camera view by default. If you want it to be a little more realistic in the cockpit, you may have to add it.
 
That is correct, the three default views available on all models regardless of type are Fixed (ground view), Nose, and Chase. None of those types require any special setup or components on the given vehicle. RealFlight simply calculates the "camera" placement and gives you the view from that location.

Nose cam shows the view from the front of the vehicle. This gives a wide-open view ahead of the vehicle itself.

RealFlight also has the concept of an onboard camera. This is an actual component that can be added and configured in the editor, just like a wing, motor, landing gear, extra weight, etc. A vehicle can have many onboard cameras. They are only available on models where they have been explicitly added. They can be placed anywhere you like, and will show parts of the vehicle where applicable. This makes them well suited to cockpit views since they can be placed within an aircraft cockpit if it has a suitable one.
