Erratic Carbon Cub in flight

Basically won’t fly straight and level, uncommanded climbs,descents.
Also, only have up elevator.

Tell us more about your controller setup. InterLink DX, your own radio via USB, or your own radio with wireless USB receiver. If it's your own radio, which one?

If you're using the HobbyZone Carbon Cub S+ 1.3m, then also know that particular plane has some GPS-assisted features such as a virtual fence and holding pattern. The HobbyZone Carbon Cub S 2 1.3m doesn't have the GPS stuff and will be a little more "normal", but still has the SAFE self-level beginner mode.

The Beginner Mode on both planes probably limits down elevator quite a bit. It's meant to help beginners avoid pointing the plane toward the ground and crashing, but it also makes you feel like you can't push the nose down when you want to.

For the Horizon Hobby-branded aircraft (E-Flite, HobbyZone, Blade), looking at the manual for the real thing can help you understand how the plane is supposed to behave.
 
At least the controller isn't potentially part of the problem then. Everything on the InterLink DX just works without fiddling with settings.

Here's what the switches do in general. Of course, it varies a little bit based on the capabilities of the model you're flying.

Switch A - Move retractable landing gear up or down, or else activate a smoke trail on some models
Switch B - Change flight modes on models that implement Horizon's SAFE trainer or SAFE Select technology
Switch C - Elevator Dual Rates (also called Low Rates)
Switch D - Flaps
Switch F - Aileron Dual Rates
Switch G - Rudder Dual Rates
Switch H - Throttle Hold (all helicopters in RF are designed to keep the motor off when Throttle Hold is turned on)
Button I (on top) - Panic Mode, if equipped (only on beginner-style aircraft), or also Thrust Reverse (on planes equipped with that function)

It's Switch B that will change from Beginner Mode (with SAFE self-level) to Intermediate Mode (normal controls unless the plane hits a limit for pitch or roll) to Experienced Mode (normal flight). Holding the button will enter Panic Mode, which quickly levels off the plane regardless of how Switch B is set. On the few planes with GPS features, the button instead enters a circular holding pattern.

Most models are set up for all Dual Rates combined on Switch C. Some have them broken out across the three switches for individual control.
 
@Dc2x4drvr, I believe @flightengr got this exactly right: It sounds like you're flying the HobbyZone Carbon Cub S+ 1.3m, which has SAFE+ GPS-based features.

If you like that model but would prefer to fly it without those features, simply load up the HobbyZone Carbon Cub S 2 1.3m instead.
