How do you set field dimensions in the editor?

You don't. It's just a whole world of open space with lots of different topography. You set the dimension of the objects that you place on that piece of land in the location you decided to build on. Some items can be almost any size using the x/y/z scale. Some are restrained in what dimensions they can accept, and in size. Runways can be pretty long. Trees or trucks are limited.
Objects are placed in relation to each other (how far away, etc.). But there are no boundaries to limit the amount of land you use for your flying field. It helps to place at least one pilot and one plane "spawn" objects to tell the system where you will initially be standing, and where the airplane will initially appear.
