Looking for some hard to fly planes

I normally fly what I consider "easy to fly" planes - essentially high powered / light weight 3D planes, but I am often asked to do maiden flights of planes that have really horrible power to weight ratios and a variety of of factors that give them poor flight characteristics.

Can someone point me to some harder to fly RF models? I'd prefer to start with some models that are essentially similar to real RC planes that just happen to have poor power to weight ratios, bad stall tendencies, control coupling, etc. rather than just trying to edit something. Does anyone have any candidates?

How are you at making transition planes. I have a eflite X-vert I made that flies pretty, well in plane mode. But I don't have the know how, to make it transition to vertical flight.
