Is there any way to definitively turn off thermals? Are they already off when set to "Simple"?

Simple Thermals means they are only present, when added as an airport feature. There are just a couple stock fields with them. Thermal Park and the Observatory, are 2 off the top of my head that always have them. Flying in other fields with simple Thermals means you will not have the updrafts all over the terrain.

OK, thanks. I'm customizing my favorite heli and now it's misbehaving on descents so I needed to know that there were no outside influences like thermals.

Do you have wind turned up because you may be experiencing turbulence.

Wind

There are a couple of places, for wind settings.

In the Main menu Environment>Wind:
Direction, Speed, & Turbulence.

There are other wind settings from:
Main menu Simulation>Settings>Wind>
Wind Variation %, Wind Gust %, & Turbulance %.
Thermals (simple, dynamic)
