The missiles will be detachable (simulated firing) or I could make them as a no show (using engine to show) if that is what you would like.

but don't go out of your way just for me. I'm curious about the process. i briefly tried to remove armament a couple of times, but haven't figured it out yet.

okay, so now i know what you're talking about when you say the "engine to show" technique. smart workaround, guys.

i think armament has a certain coolness/badass factor, but for me it takes a away from an aircraft's beautiful lines.
...and the Sea Vixen surely has beautiful lines.

is there a way to actually delete or hide armament at-will for my own copies of aircraft?

Yes, assign the part to a linear actuator and move rotate the part so that is obstructed from view by another part.

alternatively if the part is very large and the plane is a prop plane or could be edited to fake turbines with thrusters. you can add a engine and tell the engine to put the propeller at the part you want removed. then make the propeller really small.
